I was in exactly same situation with you. If you have an Green card EAD (GC EAD), then you are fine.
Just find another job similar to your previous one. But, make sure that they are willing to write Supplement J before your green card interview. In some cases, you can postpone your interview.

And, I have heard that someone got Green card even though he wasn’t employed. He/she might be super lucky.
I recommend you to discuss with your lawyer.
